Annual Cleaning (Dust Sweeping)
Starting from the day after the New Year's Eve (the 24th day of the twelfth lunar month), every household will carry out an annual thorough cleaning of their houses inside and out. This practice symbolizes "letting go of the old and welcoming the new", removing bad luck and welcoming a clean environment to usher in the New Year.
Prepare festival food
January 25th: Fried Tofu
In the north, there is a custom of "frying tofu on the 25th". Tofu symbolizes "blessings", and after being fried, it can be stored for a long time and is used as a year-end gift. At the same time, meatballs, fish, etc. are also fried.
February 26th: Stewed Meat
Large pieces of meat such as pork knuckles, pork feet, or pork heads are cooked in advance due to the long cooking time, so they can be easily served on New Year's Eve.
January 27th: Killing the chicken
Traditionally, the family would slaughter their own roosters to symbolize "great good fortune", as it was done to prepare the main dish for the New Year's Eve dinner.
January 28th: Fermenting dough
In northern households, they start to ferment the dough as a preparation for making steamed buns and dumplings. Due to the low winter temperatures, the fermentation process takes a longer time.
January 29th: Steamed Buns and Bread
The fermented dough is steamed into buns and steamed buns. Some of them are even shaped into various patterns, such as lotus seed flowers and carp, symbolizing good luck.
